Time Out.

I have put myself in time out.
My to-do list for the end of the 9 weeks is 6 miles long.
I have put myself on a blog time-out until my list gets done.
For the record I would totaly perfer blogging to the 1578562 grades I have to put in, the 4 tests I have to make and the 65 online boredom sessions... errr I mean training courses I have to do.

Hopefully getting back to blogging will actually motivate me to power though the list!
but yall will be here when I get back... righhhhhtttttt???
(hopefully I can finish this week and be back on Monday for Smell the Roses, because it ROCKS)



Happy First Birthday Tred!

 This is Tred Michael Collins. My favorite 1 year old on the planet. True Life

His mama and I became friends in college, she is one of my dearest friends in this world.

Yesterday was his "real" first birthday, but we celebrated it on Saturday.

NOT only did I get to celebrate with the cutest one year old on the planet but I got to spend the weekend with two of my other BFF's, Stephanie(L) and Katiebeth (rR). Sadly we were missing one GREAT piece of the commune, Tory!
(yes, we call ourselves a commune… its a long story) 

Amy planned the most wonderful "Cardboard Box" Themed party… it was AMAZING!
She decorated with orange and cardboard color, to say it was perfection was an understatement.

I haven't been to a First birthday in FOREVER so I forgot how WONDERFUL the

I mean really? I'm obsessed. If my kids aren't this precious, happy and hilarious I am sending them back.

Girl Scout Cookies

No really I have NO SELF control around these little nuggets of goodness. 
Thank GOD they only come around once a year or I would weigh 300lbs.

Date Night. 
Being in a long distance relationship means that most weekends are "planned".
I got the privilege to spend saturday night unplanned on a little dinner date with my man! So special!

FINALLY got around to getting my hair done… nothing drastic just good OLE BLONDE.
Literally getting my hair done is one of my favorite things :)

I am crazy-insanely-ridiculously obsessed with Hunger Games. 
I literally could barely put it down to write this post. 

ANNNND of course Valentines Day. 
Reese sent me these beautiful flowers…at school. 

He attached a sweet little poem…

High Five Friday No. 12

No. 12!! Wow I can't believe i've been high five-ing with Lauren for 12 weeks… NUTS.
I am SUPER excited because my bestie is coming in town this weekend and we get to meet up with some of our other besties!!!

This week was well eventful to say the least, some good, some bad, some just simple moments inbetween…

My first Mardi Gras experience. 
It rained on my parade, no literally, it RAINED on my parade. Poured buckets but we still had SO MUCH FUN. I was cold and soaked but very very happy. I loved that I didn't care my hair looked like a rats nest, my mascara was running down my face and my jeans were plastered to my legs.

Doesn't it look miserably fun?
College Week
This week has been college week at school. I have been repping my aggie maroon all week! I've had my work cut out for me fighting a sea of burnt orange but I think slowly but surely I am adding more maroon team! 

Have I mentioned how much I love twitter and how much I love my blog friends…

Charlie Gore: Walking the Blue Line

In September my friend Charlie called me up and asked me to shoot the cover for his upcoming EP. I was stoked. I lived 4 years of my college life under the cloak of his music. It provided a sound track for road trips, late night study sessions and countless other college shenanigans. I was so excited to accept this challenge

This week his EP "Walking the Blue Line" was released this week!

From My Kitchen with Love: Balsamic Chicken with Greek Salsa

Balsamic Chicken with Greek Salsa
I don't think I can underestimate my love for greek/mediterian food. Olives, feta… its just so stinking good. 
I had been eating my weight in greek salad lately and wanted to put a spin on the ingredients I was using for the salad. Enter the fresh, flavorful and bright Greek Salsa.
4 chicken breast
4 tbsp EVOO
1/4 c balsamic vinegar
1 tsp garlic powder

Pre heat the oven to 325. Marinate the chicken in balsamic, EVOO and garlic powder mixture.  After marinating place chicken in shallow baking dish bake for 25 minutes. 

Greek Salsa:
1 roma tomato chopped
1/2 cup red onion chopped
1/2 cup green apple chopped
1/2 cucumber chopped
8-10 kalamata olives halved 
2 tbsp freshly chopped parsley 
1 cup feta cheese
1/2 lemon juice
1/3 cup EVOO
1tbls Balsamic Vinegar
salt, pepper, garlic powder to taste

Chop and combine all ingredients.

Top chicken with salsa and enjoy. 
Simple, easy, delicious.

Remember I cook for 1 so I ALWAYS have extra... I ate the rest of the salsa for luch with baked pita chips... OMGeee it was so good, letting the salsa marinate for several hours in the fridge made it even better!!
