Balsamic Chicken with Greek Salsa
I don't think I can underestimate my love for greek/mediterian food. Olives, feta… its just so stinking good.
I had been eating my weight in greek salad lately and wanted to put a spin on the ingredients I was using for the salad. Enter the fresh, flavorful and bright Greek Salsa.
Chicken:
4 chicken breast
4 tbsp EVOO
1/4 c balsamic vinegar
1 tsp garlic powder
Pre heat the oven to 325. Marinate the chicken in balsamic, EVOO and garlic powder mixture. After marinating place chicken in shallow baking dish bake for 25 minutes.
Greek Salsa:
1 roma tomato chopped
1/2 cup red onion chopped
1/2 cup green apple chopped
1/2 cucumber chopped
8-10 kalamata olives halved
2 tbsp freshly chopped parsley
1 cup feta cheese
1/2 lemon juice
1/3 cup EVOO
1tbls Balsamic Vinegar
salt, pepper, garlic powder to taste
Chop and combine all ingredients.
Top chicken with salsa and enjoy.
Simple, easy, delicious.
Remember I cook for 1 so I ALWAYS have extra... I ate the rest of the salsa for luch with baked pita chips... OMGeee it was so good, letting the salsa marinate for several hours in the fridge made it even better!!
