From My Kitchen with Love: Sweet and Sour Chicken

There are many things I love in this world sweet and sour chicken hover somewhere around 11, on what scale I do not know but that sounds about right, we will go with an 11. 

In my mind sweet and sour chicken is something that you sit in pale pink and mint green dining rooms and devour or call in an gorge on in sweats on your couch 
NOT something you actually make yourself. 

Luckily for you my dear lovely sweet and sour chicken loving blog readers I bring you the BEST, I repeat BEST, sweet and sour chicken ever. 

Both my mother and bff made this dish this weekend and ranted and raved. 
I got a text from KBB which simply read:

Sweet and Sour Chicken 
So sweet and sour chicken does not take a pretty picture. Good thing it's so delish. 

3-4 boneless, skinless chicken breasts
Salt and pepper
1 cup cornstarch
2 eggs, beaten
1/4 cup canola oil
¾ cup sugar
4 tablespoons ketchup
½ cup vinegar
1 tablespoon soy sauce
1 teaspoon garlic salt
For the chicken, cut boneless chicken breasts into chunks. Season with salt and pepper. Dip chicken in cornstarch and then in egg. Fry in a little oil until brown but not cooked through. Place in a single layer in a baking dish. Mix sauce ingredients together and pour over chicken.
Bake for one hour at 325 degrees. Turn chicken every 15 minutes so it is evenly coated with the sauce. Serve over rice.
** I roughly chopped some onion and green/red bell peppers as well as some canned pineapple chunks 15 minutes after baking.

I have been looking for a good Sweet and Sour Chicken Recipe! I'm just afraid to try them and waste food if it stinks :) I'm going to give this a try this week!! Yum
