Last week I
complained told you about my energy crisis.
I am the first one to tell you that I am not always the best at follow through especially when it comes to stuff about me.
Well. I actually followed through.
I had recipe that I wanted to share with you.
I have seen several versions of breakfast cookies on pinterest but none of them hit me quite right. So I decided to take bits and pieces from each and mash them up together to create these little beauties...
Cranberry Almond Breakfast Cookies
1/2 c applesauce
1/2 c of peanut butter
1/2 c of rolled oats
1/4 tsp cinnamon
1 tsp of vanilla
1/4 c dried cranberries
1/4 chopped raw almonds
pinch of salt
1 packet of splenda
Preheat oven to 350.
Combine apple sauce and peanut butter.
Add oats and all other ingredients.
Mix until combined. Shape into cookies on a foil lined baking sheet.
Bake for 12-14 minutes.
