Trader Joe's Copy Cat Mega Crunch Salad





When Trader Joe's popped up in my neighborhood I, like many, were wooed by the cookie butter and Joe Joes and well of course the Two Buck Chuck. What I didn't realize until much too late was their AMAZING prepared food section. I casually picked up the Mega Crunch Salad with a Big Bite and my life was CHANGED. I wish I was kidding, I am not. They don't lie this sucker is CRUNCHY! A combination of carrots, radishes, sunflower seeds, jicama, broccoli stalks and romaine lettuce provide the crunch while the cilantro dressing provides the BITE! To round out the rest of the salad there is quinoa (and you know how I feel about quinoa), adzuki beans and dried cranberries. Take my advice, either run (don't walk) to your nearest Trader Joe's or make it yourself. You will NOT be sorry!



Mega Crunch Salad with a Bite
Salad
1c chopped carrots
1c chopped radish
1c chopped broccoli stalks
1c chopped jicama 
1c roasted sunflower seeds
1c dried cranberries 
1c adzuki beans (or other red beans)
1c cooked quinoa 
3c chopped romaine lettuce 

Combine until all ingredients are distributed through the salad. 
Cilantro Dressing

2 bunches of cilantro
2 cloves of garlic 
1/4c lime juice
1/4c honey 
1/2c olive oil 
1/2c Rice Vinegar 
1 heading tablespoon of chili powder 
salt and pepper to taste 

Add all to a food processor or blender and blend until all combined.


**I chopped all the veggies and but them in individual baggies to be able to pull them out for my lunch! This salad makes a KILLER mason jar salad!

I am addicted to this salad and the dressing is beyond awesome. THANK YOU! I make this amazing salad spectacular by adding crumbled TJs goat cheese with honey, and chopped chicken.

What are the chances?! Literally sitting at my desk with this salad rn. I love it and have it for lunch 2-3x per week.
Was quite mortified, though, at the amount of sugar in it. (29g) (!!!) Thank you for posting this. Going to replicate at home ASAP, minus all the sugary sweet goodness. You are a rock star. <3
